VINIFICATION: After the harvest, Glera grapes are gently pressed to obtain the must, which is then inoculated with selected yeasts and fermented at a controlled temperature of 15–16°C.
Pinot Nero grapes undergo maceration on the skins for six days. The two varieties are then blended and prepared for the sparkling process.
SPARKLING METHOD: The formation of bubbles takes place using the Charmat–Martinotti method.
COLOUR: Pale pink, with a fine and elegant perlage.
AROMA: Delicate notes of red fruits such as strawberries and cherries, complemented by the classic Prosecco aromas of apple and pear, enriched with subtle floral nuances.
TASTE: Lively and creamy bubbles combine with pleasant crispness and a well-balanced structure. Red fruit flavours intertwine harmoniously with a gentle citrus note, creating a fresh and refined finish.
FOOD PAIRING: Excellent with both cold and warm appetizers, fish dishes such as seafood risotto, and fresh cheeses. Also ideal as an aperitif.
